We’ve done a French creperie proud with this High-Protein Apple Crepe. Fresh, thinly sliced apples are sweetened with low-glycemic coconut sugar, and then warmly seasoned with pumpkin pie spice. Next, they’re topped with a thin layer of high-protein batter made with our FlavCity Vanilla Cream Protein Smoothie. The result is a delicious, nutritious and easy-to-make dessert that takes advantage of autumn's apple abundance!Makes 1 crepe

Apple Layer

Batter

Directions
  • Whisk egg, milk, water, and salt together in a large mixing bowl. Add flour, FlavCity Vanilla Cream Protein Smoothie, and avocado oil (or melted butter) and whisk vigorously until smooth. Set aside.
  • Core and thinly slice one apple (it’s best if you use a mandolin), then cut any remaining thick slices in half so you have apple slices of even thickness.
  • Add some butter to a ceramic non-stick pan that’s been preheated over medium heat, then lightly sprinkle the coconut sugar around the pan. Starting at the outside of the pan, layer the apples in a spiral pattern working through to the center, covering the bottom of the pan completely. Dust the apples with pumpkin pie spice, then gently pour the batter over the top making sure to cover the apples completely. Cover the pan with a lid and let it cook through until the batter is set (about 7 minutes).
  • Remove the lid, and take a plate roughly the size of the crepe and place it over top of the pan, then using oven mitts, flip the pan over so the crepe transfers to the plate and the apples are exposed.
  • Garnish with a dollop of Greek yogurt or cream cheese, and chopped pecans, if desired, and enjoy!
