Protein Nutter Butter Cookies

These Protein Nutter Butter Cookies are reminiscent of those peanut-shaped sandwich cookies from our childhood. But, these have only four ingredients and are so much better for you because they’re amped up with protein from our FlavCity Vanilla Cream Protein Smoothie. Plus, they’re grain-free! But they still have a delicious nutty taste with a creamy sandwich center. Relive your childhood the healthy way with this easy and yummy recipe!Makes 11 cookie sandwiches (22 cookies)

- Preheat the oven to 350F.
- Make the cookies. In a bowl, combine all the cookie ingredients until it forms a nice dough. Set it aside and let it hydrate for 5 minutes before dividing it and forming it into 22 even balls.
- Place the balls on a parchment paper-lined baking sheet about two inches apart. Then take a fork and slowly press down to create a cross-cross pattern on each cookie, being careful not to break the cookie dough (if you do, gently press them back together).
- Bake for 12-14 minutes until the edges are lightly browned. Remove from the oven and cool completely before adding the filling.
- Make the filling. Mix the nut butter and maple syrup together in a bowl.
- Make the sandwiches. Gently smear a small amount of the filling on the bottom of one cookie, top it with another cookie, and gently press it to create a sandwich. Repeat this process with all remaining cookies.
- Enjoy as a snack with some milk!
